GP3 – The Guinea Pig

Ok, we have had two months to practice since our first comp back in November and were lucky enough to land a spot at GP3. For those that don’t know it’s a one of a kind comp where everyone is supplied meat to cook and there is no electricity allowed. You can use jump boxes for your fans but that’s it. Smithfield supplied the butts and ribs, we had commodity chicken thighs and SRF gave us each a huge Waygu brisket! It’s a level playing field and really one of my favorite comps to date. After the cooks meeting we were treated to chili dogs from SRF. To date it’s the best hot dog I have ever had. We cooked to the best of our ability and stuck to our plan and walked away with our heads held high. A 26 point improvement from our last comp. Again didn’t finish DAL and scored our first points in the ROY competition. Switched from the beach chair to a reclining chair and got closer to 4 hours of sleep this time. Still have a lot of work to do but we are showing improvement.
